Wylie Dufresne's birthday at the French Institute

I found myself back at Le Skyroom of the French Institute today, tasting food made by one of the leading proponents of molecular gastronomy, and the owner of wd~50 restaurant in Manhattan. We wished chef Wylie Dufresne happy birthday, but he kept on working. I was in my element sampling his various odd creations such as bizarro sushi with "forbidden rice" and what appeared to be a piece of chocolate, but was actually foie gras with cocoa. Others were perplexed by the odd combinations and rare ingredients. We were gathered for the early announcement of the inter-disciplinary arts program, "Crossing the Line: Transfiguring Cultures" to be held in the fall. Dufresene will participate as part of "Food Futures." Other events will include dance performances, such as "Eldorado" filmed by Olivier Assayas. |
